French Lentil Salad

I've always been a fan of Puy (French) lentils. They're firmer than other lentils and have nice crunch to them and an almost smokey flavor.

This is a great summer salad. Perfect for these steamy hot days. Serve at home for a refreshing lunch or bring to a potluck. Très délicieux!
