I found this recipe on one of my favorite websites, chef Sylvia Fountaine's "Feasting at Home". We made this last week for dinner with a good friend. I love making Indian food and we couldn't wait to grill something. It was absolutely fantastic and thoroughly impressed our dinner guest. I have my own recipe for raita but I pretty much followed everything else in Sylvia's recipe. Oh...and I also used chicken breasts not thighs. I cut the chicken in 1½ inch strips and threaded on the skewers in a back-and-forth motion (like an accordion) to help keep the meat moist...and it worked!
